Chefs Mutsuko Soma of Kamonegi and Heong Soon Park of Chan to Collaborate on Japanese-Korean Inspired Pop-Up

SEATTLE - February 22, 2017 - Chefs Mutsuko Soma of Kamonegi and Chef Heong Soon Park of Chan Seattle swap cuisines for one night to create a menu celebrating two Asian cuisines that have inspired chefs across the globe. The menu will feature Korean-Japanese dishes, Soma to implement Korean touches on each dish, likewise Park for Japanese, and Soma's signature soba with a Korean flair. 
The Kamonegi x Chan dinner will take place at Chan Seattle at 86 Pine Street on Sunday, March 5 with seating’s available from 5pm to 8:30pm. Tickets for the dinner are available through Brown Paper Tickets (http://www.brownpapertickets.com/event/2888754).
The 6-course meal complete with assorted banchan is $85, including gratuity. Guests can purchase a $30 beverage pairing with the menu and additional bar options at Chan. 
The tentative menu is as follows: 
Banchan
  • Daikon wrapped citrus herring
  • Squid leek pancake with squid ink kewpie
  • Sunchoke namul
  • Dungeness crab chawanmushi with chogochujang
  • Mackerel croquette with umeboshi aioli
  • Shirataki noodle with pullock roe
Raw
Japanese hamachi crudo with local radishes, chili, citrus and yuzu vinaigrette
Bibim Roasted Root Vegetables
carrot, turnip, parsnip, brussel sprout, buckwheat, sous vide egg, Chan house ssam sauce
Ishiyaki 
Sake Kasu braised Kurobuta pork belly and Wagyu short rib ssam with butter lettuce bouquet, shiso, dipping sauces
KFC Seiro
Korean Fried Chicken cold soba with hot dipping sauce
Sweet
Nagasaki style kasutera with honey yuzu ice cream
 
 
About Mutsuko Soma and Kamonegi
Kamonegi is a Seattle based soba pop up founded by chef Mutsuko Soma. Soma studied traditional soba making in Tokyo, Japan before deciding to bring this unique art form to Seattle. While in Japan, Soma learned that Washington state was among the largest producers of buckwheat in the United States.
Today, she operates pop ups through Kamonegi, named after a classic Japanese culinary pairing of duck and leeks and her signature soba dish of the same name.  Through Kamonegi, Soma introduces soba mixed, rolled, and cut by hand; a specific process that produces silky, lightly buoyant noodles that retain the nutty aroma of buckwheat. She aims to bring Kamonegi to other locations to highlight the previously underrated noodle and share the experience of making and consuming soba.
